Ingredients
1cupwhole wheat flour
2tspbaking powder
¼tspsalt
½tspCinnamon
½tsppumpkin pie spice
¼cuppumpkin butter,or canned pumpkin
1tbspbrown sugar
1cup1% milk
3large egg whites
2tspoil
1tspvanilla
butter flavor cooking spray
½cuppumpkin butter,for topping
Preparation
Mix the flour, baking powder, salt, cinnamon, sugar, and pumpkin pie spice in a bowl.
Combine the milk, egg whites and pumpkin butter in a bowl, then mix until smooth.
Combine the wet ingredients with the dry, then mix well with a spoon until there are no more dry spots. Don’t over-mix.
Heat a large skillet on medium heat.
Spray the oil to lightly coat, then pour ¼ cup of the pancake batter.
When the pancake starts to bubble and the edges begin to set, flip the pancakes.
Repeat with the remainder of the batter.
Top each serving with an additional 2 tablespoons of pumpkin butter.
