Ingredients
15ozbutter beans,(1 can), rinsed, drained
1¼lbsturkey breast,extra-lean ground
1egg white,beaten
1tsponion powder
½tspgarlic powder
½tspsalt
¼tspblack pepper
½cupItalian bread crumbs
1tbspolive oil
Preparation
Mash the butter beans in a large mixing bowl.
Add the ground turkey, egg white, onion powder, garlic powder, salt, and pepper. Stir until evenly mixed. Fold the bread crumbs into the mixture evenly.
Form the mixture into 1-inch meatballs.
Heat oil in a skillet over medium heat. Cook the meatballs in hot oil for 5 to 7 minutes until browned on all sides.
Cover the skillet and continue cooking for about 5 minutes more until the meatballs are no longer pink in the center. An instant-read thermometer inserted into the center should read at least 165 degrees F.
