Ingredients

½onion,diced

2tspolive oil

6cupscabbage,diced ½ inches

1carrot,shredded

14ozdiced tomatoes,with juice

1bay leaf

1tspItalian Seasoning

1tbsptomato paste

6cupsbeef broth,or chicken broth

1tbspparsley,fresh

Preparation

Cook onion in olive oil for 3 to 4 minutes or until tender.

While onion is cooking, dice cabbage. Add cabbage to the pot and cook over medium heat for about 8 minutes or until it starts to soften.

While cabbage is cooking, prepare other ingredients. Add all ingredients to the pot, bring to a boil and simmer uncovered for 15 minutes or until cabbage is tender.

Discard bay leaf, season with salt and pepper to taste, and serve.
