Ingredients
3Roma tomatoes,seeds removed, diced
2ripe avocados,diced
⅓cupred onion,diced
15ozblack beans,(1 can), rinsed and drained
15ozblack eyed peas,(1 can), rinsed and drained
1½cupsfrozen sweet corn
1bell pepper,diced
1jalapeno pepper,seeds removed, diced into very small pieces
⅓cupcilantro,finely chopped
tortilla chips,for serving
⅓cupolive oil
2tbsplime juice,fresh preferred
2tbspred wine vinegar
1tspsugar
½tspsalt
½tsppepper
¼tspgarlic powder
Preparation
Combine the tomatoes, avocado, onion, black beans, black-eyed peas, corn, pepper, jalapeno pepper, and cilantro in a large bowl. Toss and stir well until well-combined.
In a separate bowl, whisk together the olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic powder.
Pour the dressing over the beans and vegetables, then stir and toss very well.
Serve chilled, and enjoy!
