Ingredients

9ozsoba noodles

2Persian cucumbers,or 1 English cucumber, thinly sliced

2scallions,thinly sliced

⅔cupfresh cilantro,chopped

⅔cupedamame,shelled

sesame seeds,toasted, for sprinkling

¼cupnatural peanut butter

¼cuplime juice,freshly-squeezed

2tbspsoy sauce,low-sodium

2tbsprice vinegar

1tbsphoney,or maple syrup

1tbspsesame oil,toasted

½tspground ginger

Preparation

Cook the soba noodles until al dente according to package instructions. Drain completely, then rinse with cold water until chilled.  Set aside.

Meanwhile, as the noodles are cooking, whisk together the peanut butter, lime juice, soy sauce, rice vinegar, honey, sesame oil, and ground ginger until combined.

In a large mixing bowl, combine the chilled soba noodles, cucumbers, scallions, cilantro, edamame, and peanut sauce. Toss until evenly combined. Taste and season with extra soy sauce, if needed.

Serve immediately, sprinkled with toasted sesame seeds, and enjoy!
