Ingredients

1cupgrape tomatoes,quartered

15ozgarbanzo beans,rinsed and drained

1cupquinoa,cooked

2tbspred onion,minced

2tbspcilantro,minced

1½limes,juiced

Kosher salt and fresh pepper,to taste

1cupcucumber,diced

4ozavocado,diced, 1 medium hass

Preparation

Combine all the ingredients except for avocado and cucumber, season with salt and pepper to taste.

Keep refrigerated until ready to serve.

Just before serving, add cucumber and avocado.
