Ingredients
1 cup unsalted butter, softened
1 cup sugar
4 large eggs
2 cups all-purpose flour
½ cup milk
1 tsp lemon extract
1 tsp vanilla extract
1 ½ cups raisins
2 tsp baking powder
1 tsp coarse salt
Preparation
Start by preheating the oven to 350 degrees F.
Afterward, grease a 9-inch tube pan and set aside. Sift dry ingredients together.
Cream the butter in a large bowl and gradually add sugar.
Then, beat the mixture with an electric mixer on medium strength until light and fluffy.
At this point, start adding eggs one at a time to the mixer, beating them after each addition.
Start to slowly add dry ingredients alternately with milk and make sure to mix it well after each addition.
Then, add in the lemon and vanilla extracts and continue mixing.
Afterward, fold in the raisins into the batter.
Now pour the batter into the pan and bake for 60 minutes, or at least until toothpick inserted in the center comes out clean.
Once the batter is done baking, make sure to cool it for a few minutes.
Remove the cake from its pan and set it on a cake plate. Dust the cake lightly with powdered sugar and serve.
