Ingredients
4 cups spinach, pre-cleaned
¼ cup celery, chopped
1 cup pear, peeled, trimmed and diced
½ cup dried cranberries
½ cup blueberries, fresh
2 tbsp evaporated milk
3 tbsp lemon juice, natural
1 tsp sugar
salt and pepper to taste
Preparation
In a bowl, lightly toss the spinach, celery, pear, cranberries, and blueberries together and set aside.
Using a separate bowl, mix the evaporated milk, lemon juice, salt, pepper, and sugar.
Pour the mixture over the salad. Then toss the salad lightly and serve!
