Ingredients
1jalapeno,stem removed, halved and de-seeded
12oztomato juice,can
1smallwhite onion
2mediumtomatoes,cut in quarters
½tbspkosher salt
½tbspblack pepper,freshly ground
½tbspcumin,ground
2tbspcanola oil
Preparation
Add the jalapeno and tomato juice to the blender and blend until smooth.
Add in the rest of the ingredients and pulse until it has a coarse texture.
Serve or refrigerate for up to 3 days.
