Ingredients
3cupsmedium pasta,uncooked
¼cupwhite onion,minced
1cupsauerkraut,drained
½cupdill pickles,chopped
1cupcorned beef,sliced or cubed
1cupswiss cheese,cubed
⅔cupmayonnaise
⅓cupsour cream
⅓cupthousand island dressing,or russian dressing
1½tbspdijon mustard
3tbspsauerkraut brine
1½tspcaraway seeds
salt and pepper,to taste
Preparation
Cook the pasta according to package directions.
Drain the pasta, then run them under cold water.
Combine the mayonnaise, sour cream, thousand island dressing, mustard, brine, caraway seeds, salt, and pepper in a small bowl.
Toss the pasta, onion, sauerkraut, dill pickles, corned beef, and swiss cheese with the dressing.
Refrigerate for 1 hour.
Drizzle with extra thousand island dressing, if desired.
