Ingredients
5lbsleg of lamb,boneless
1tbspolive oil
9clovesgarlic,minced
2tbspfresh rosemary,minced
1tbspkosher salt
1tspcoarse ground black pepper
Preparation
Preheat oven to 325 degrees F.
Rub lamb with olive oil.
Mix together the garlic, rosemary, salt, and pepper and rub it all over the lamb.
Place onto a rack in pan and roast for 1 hour, tented with foil.
Remove foil and cook for 20 minutes, then start checking for doneness. The thermometer should register 145 degrees F.
Let rest for 10 minutes before serving.
