Ingredients
¾lbred new potatoes
½mediumred onion
1redpepper
2tbspolive oil
salt and freshly ground pepper,to taste
Preparation
Preheat oven to 350 degrees F.
Toss all ingredients together and place in a roasting pan and cook for about 1 hour until golden brown. Toss the vegetables after a ½ hour. This allows them to caramelize in the pan.
Serve and enjoy.
