Ingredients
20 oz frozen spinach, thawed
2 cups milk
6 tbsp unsalted butter
¼ cup all-purpose flour
¼ cup yellow onion, chopped
¼ cup white wine
1 bay leaf
⅛ tsp nutmeg
salt and ground pepper, to taste
Preparation
Melt the butter in a wide skillet over medium heat.
Add spinach and onions. Saute until onions turn translucent and spinach has released its liquid, for roughly 5 to 7 minutes.
Add flour and stir until it turns light golden for about 5 minutes.
Deglaze with white wine and reduce briefly.
Add milk and bay leaf. Stir to combine. Bring mixture to a simmer.
Continue simmering until the mixture has thickened and slightly reduced, for roughly 10 minutes.
Add nutmeg, season with salt and pepper, and stir to combine. Adjust seasoning as needed.
Serve immediately. You can either serve this on its own or as a side to toast. Enjoy!
