Ingredients

4 cups chicken, cooked, shredded (or about one rotisserie chicken)

1 cup cheese, shredded, cheddar is preferred

1⁄2 cup green onions, chopped

1⁄2 cup bacon bits, about 6 cooked strips of bacon, crumbled

1⁄2 cup celery, washed and sliced

1 tbsp parsley

salt and pepper, to taste

garlic powder, to taste

3⁄4 cup mayonnaise

4 tbsp ranch dressing

3 tbsp sour cream

1 tbsp lemon juice, optional

romaine lettuce leaves, washed and dried

bread, sliced

Preparation

Start by shredding the chicken and removing the bones. Transfer the shredded chicken into a mixing bowl. Add cheese, green onions, crumbled bacon, parsley, and celery. Stir until well combined.

In a separate mixing bowl combine the mayonnaise, ranch dressing, lemon juice, and sour cream. Stir until well combined.

Add the chicken mixture to the dressing and stir until the chicken is well coated and dressed. Season with salt, pepper, and garlic powder to taste.

Next, take a slice of bread and add lettuce leaves on top. Scoop the chicken salad mixture on top of the lettuce and top with another slice of bread. Slice the sandwiches in half and serve.
