Ingredients

12ozspicy Italian sausage

2large onions

1bunchkale

4garlic cloves

coarse salt and ground pepper

8ozlasagna noodles

2cupstomatoes,(cherry or grape)

3cupsricotta cheese,part skim

½cupparmesan cheese,finely grated

Preparation

Preheat oven to 400 degrees F.

In a 5-quart pot, cook sausage over medium heat, stirring often, until browned. Stir in onions; cover, and cook until softened.

Uncover; cook for 10 to 15 minutes, stirring occasionally, until golden brown. Add garlic; cook 2 minutes. Transfer to a large bowl.

Add kale and half a cup water to pot; season with salt and pepper. Cover; cook over medium-low heat for 10 to 15 minutes, tossing occasionally, until tender. Drain; coarsely chop. Transfer to bowl with onions.

Meanwhile, cook noodles 2 minutes less than package instructions. Drain; rinse under cold water.

Add noodles, tomatoes, and ricotta to the bowl; season with salt and pepper. Toss well. Pour into a 9×13-inch baking dish; smooth top with a spatula.

Sprinkle with Parmesan. Bake for about 40 minutes, until golden brown.

Cool 10 minutes before serving. Enjoy!
