Ingredients
1 box mashed potatoes
salt, to taste
2 tbsp margarine
1 ½ lb lean ground beef
1
onion, large, chopped
3 garlic cloves, minced
8 oz fresh mushrooms
1 can condensed tomato soup, (10 oz)
salt , to taste
seasoned pepper, to taste
1 ½ cups cheddar cheese, shredded
Preparation
Prepare mashed potatoes according to box instructions.
In a large skillet, saute ground beef, onion, and garlic until meat is browned.
Add mushrooms and cook until tender. Drain fat.
Stir in soup and mushrooms; season with salt and pepper.
Simmer for 2 minutes until mushrooms are tender.
Pour into a greased 2-quart casserole.
Spoon mashed potatoes over the beef mixture, and sprinkle cheese over all.
Bake, uncovered, in a 350 degree F oven for about 35 minutes, until mixture is bubbly and cheese begins to brown.
