Ingredients
3½cupschicken stock
1small onion
1celery stalk
¼cupbrown rice,uncooked
½lbmedium shrimp
1tbsplime zest,grated
1lime juice
1tspred pepper flakes,crushed
salt and pepper,to taste
Preparation
Combine the stock, onion, celery, and rice in a 6-quart pot.
Cover and bring to a boil.
Reduce the heat and simmer for about 40 minutes until the rice is tender.
Stir in the shrimp and simmer for about 5 minutes until they are pink and cooked through.
Stir in the lime zest, lime juice, and pepper flakes.
Taste and season with salt and black pepper if needed.
