Ingredients

1tspolive oil

4pcsflounder fillets,(6 oz each), or any white fish such as tilapia

¾cuponion,chopped

2garlic cloves,minced

¾cupgreen bell pepper,diced

2½cupstomatoes,chopped

1tbspcajun spice seasoning

Preparation

In a deep skillet, cook onion and garlic in olive oil on medium heat for a few minutes until soft.

Add tomatoes, peppers, and spices; stir and cook for about 2 to 3 minutes until tomatoes are soft.

Lay fish fillets in the sauce, then cover and cook on medium-low for about 12 to 15 minutes until fish flakes easily.

Place fish on plate and spoon sauce on top. Serve immediately.
