Ingredients

1½lbchicken breasts,boneless skinless

2tbspolive oil

4ozsmall mushrooms,sliced

1cupheavy cream

½cupchicken broth

1tspgarlic powder

1tspItalian seasoning

½cupparmesan cheese

1cupspinach,chopped

½cupsun dried tomatoes

Preparation

In a large skillet, add olive oil and cook the chicken on medium high heat for 3 to 5 minutes on each side, or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate.

Add the mushrooms and cook until tender. Remove and set aside on plate.

Pour in the heavy cream, chicken broth, garlic powder, Italian seasoning, and parmesan cheese. Whisk over medium high heat until it starts to thicken.

Add the spinach, sundried tomatoes, and mushrooms and let it simmer until the spinach starts to wilt. Add the chicken back to the pan.

Serve over pasta, and enjoy!
