Ingredients

1pkgSmithfield Steakhouse Mushroom Flavored Pork,cut into 1-inch slices

3tbspolive oil,divided

salt and pepper

½lbbrussels sprouts,quartered

2sweet potatoes,cut into 1″ cubes

½lbbaby red potatoes,quartered

¼cupdijon mustard

⅓cupmaple syrup

1tbspapple cider vinegar

Preparation

In a large skillet add 1 tablespoon olive oil and add the sliced pork and cook until no longer pink. Remove and set aside on a plate.

Add 2 tbsp olive oil. Add Brussels sprouts, sweet potato and baby potatoes. Sauté until almost fork tender.

In a small bowl whisk together the dijon mustard, maple syrup, and apple cider vinegar. Pour on top of the vegetables. Add the pork back to the skillet and heat throughout.
