Ingredients
4 lb pork loin, boneless and skinless, preferably center cut
2 green apples, sliced into ½-inch dice, divided
5 oz red onions, slice
½ cup unsalted butter, cubed and chilled
½ tsp ground cinnamon
½ tsp dried thyme
⅓ cup honey
2 cups applesauce
salt and ground black pepper, to taste
1 cup mashed potatoes, or any potatoes, cooked to your preference
1 cup vegetables, sauteed, or any vegetables of your choice, cooked to your preference
Preparation
Make slits on the pork loin, then stuff the apples into those slits.
Season the pork on all sides with salt, pepper, and cinnamon. Set aside.
Combine remaining diced apples, thyme, and onions. Place these at the bottom of the crockpot.
Pour the applesauce and spread to cover all sides, then place the pork loin on top.
Drizzle the pork with honey, then top with cubes of unsalted butter.
Cover and cook on Low for 6 hours or on High for 3 hours.
When done, transfer the pork onto cooling racks and allow the meat to rest. Cover with aluminum foil to keep warm.
Mix the remaining contents of the crockpot to combine evenly. Season with salt and pepper to taste. Adjust accordingly.
Carve your pork loin according to your preference. Serve together with potatoes and vegetables done to your preference.
