Ingredients
1lbbeef chuck
1cantomato puree
1cupblack beans,dried
1medium red onion
2garlic cloves
3tbspchili powder
coarse salt and ground pepper
¼cupsour cream
Preparation
In a 5 to 6-quart slow cooker, combine the beef, tomato puree, beans, onion (reserve 1 tablespoon for garnish), garlic, chili powder, 2 cups of water, 2 teaspoons of salt, and pepper.
Cover, and cook on High for 6 hours (or on Low for 8 hours).
Serve topped with sour cream and reserved onion.
