Ingredients
2 lb boneless chicken thighs, skinless
1 lb sausage, sliced, smoked
1 large onion, chopped
3 stalks celery, chopped
1 can tomatoes , diced , with juice
2 cloves garlic, chopped
2 cups chicken broth
1 tbsp Cajun spice mix
1 tsp thyme, dried
1 tsp oregano, dried
1 lb shrimp, peeled and deveined
2 cups long-grain rice
Preparation
Mix the chicken, sausage, onion, celery, tomatoes, garlic, chicken broth, spice mix, thyme, and oregano in a slow cooker. Cook on low for 5 hours.
Put in the shrimp and rice and raise the heat to high.
Cook for another 30 minutes and top with green onions if desired.
