Ingredients

2tbspolive oil

6chicken thighs,or breasts, boneless skinless

1tbspcajun seasoning

2cupslong grain rice

3cupschicken broth

15ozblack beans,(1 can), drained

15oztomatoes with juice,(1 can), diced

1tspchili powder

¼tsppaprika

¼tspcumin

fresh parsley,chopped, for garnish

avocado,sliced, for serving, optional

Preparation

In a large skillet, add the olive oil. Rub the chicken in the Cajun seasoning.

Cook over medium high heat until cooked throughout. Remove and set aside on a plate covered in foil.

Add the rice, chicken broth, black beans, tomatoes, chili powder, paprika, and cumin. Bring to a boil, reduce heat and cover for 20 to 25 minutes until all of the liquid is absorbed.

Add the chicken back to the pan and cover until the chicken is heated through to 165 degrees F.

Garnish with fresh parsley and sliced avocado, serve, and enjoy!
