Ingredients

1medium onion

1tsporegano,dried

2bay leaves,dried

1chipotle

1tbspadobo sauce

1cantomatoes,crushed

1canwhole tomatoes in puree

2tspcoarse salt

½tspground pepper

2¾lbspork shoulder,boneless

flour tortillas

cheddar cheese,grated

sour cream

Preparation

In a 5-quart slow cooker, combine onion, oregano, bay leaves, chipotle, adobo sauce, tomatoes, salt, and pepper. Add the pork; toss to coat with sauce.

Cover, then cook on High setting for about 6 hours until the meat is pull-apart tender. Do not uncover while cooking.

Transfer meat to a large bowl; shred with forks, discarding any gristle. Return meat to pot, then toss with sauce.

To serve, discard bay leaves; if desired, garnish with tortillas and cheddar or sour cream. Enjoy!
