Ingredients

2lbrusset potatoe,peeled and cut into 2” chunks

2chicken breasts,chopped and cooked

1jalapeno,deveined deseeded and minced

1cupsweet corn

15ozblack beans,drained and rinsed

1cupcheddar cheese,shredded

2cupscherry tomatoes,halved

2avocados,diced

⅓cupcilantro,chopped

1cupmayonnaise

1tbspapple cider vinegar

2limes,juiced

2tbsptaco seasoning

½tspkosher salt

Preparation

Add potatoes and water and bring to a boil, cooking 10 to 12 minutes until potatoes are fork tender.

Drain and and cool for 5 minutes.

Meanwhile, make dressing: Whisk all ingredients together. Taste and add salt as desired.

Stir corn, black beans, cheese, tomatoes, avocados, chicken and cilantro in with potatoes. Toss with dressing.

Cover tightly and refrigerate 1 hour before serving.
