Ingredients
½lbsushi-grade tuna,cut into ½-inch cubes
¼cupscallions,sliced
2tbspsoy sauce,reduced sodium, or gluten-free tamari
1tspsesame oil
½tspsriracha sauce
2tbsplight mayonnaise
2tspsriracha sauce
1cupshort grain brown rice,or sushi white rice, cooked
1cupcucumbers,peeled and diced into ½-inch cubes
½Hass avocado,medium
2scallions,sliced for garnish
1tspblack sesame seeds
soy sauce,reduced sodium, or gluten-free tamari, for serving, optional
sriracha,optional
Preparation
In a small bowl, combine the mayonnaise and sriracha, then thin them with a small drizzle of water.
In a medium bowl, combine tuna with scallions, soy sauce, sesame oil and sriracha.
Gently toss to combine, then set aside.
In 2 bowls, layer ½ of the rice, ½ of the tuna, avocado, cucumber and scallions.
Drizzle with spicy mayo and sesame seeds.
Serve with extra soy sauce on the side, and enjoy!
