Ingredients

1egg,room temperature

⅓cupcanola oil

⅓cupolive oil

⅓cupcider vinegar

2tbspdijon mustard

3tbsphoney

½tspgarlic powder

½tspblack pepper

1tbsppoppy seeds

10ozspinach

6bacon slices,cooked and crumbled

4hard boiled eggs

½red onion,thinly sliced

½cupfeta cheese,crumbled

1cupmushrooms,sliced

Preparation

Place the egg in a small container with 1 tablespoon of the vinegar.

While blending on low in a blender or with a hand mixer, pour in the olive oil and canola oil as slowly as possible.

Add in the remaining vinegar, mustard, honey, garlic powder and black pepper. Pulse until mixed.

Stir in the poppy seeds and salt to taste.

Combine the spinach, bacon, onion, feta cheese, and mushrooms in a large bowl.

Add in the dressing, then toss to combine.

Add sliced eggs.

Serve, and enjoy!
