Ingredients

¾ cup unsalted butter, softened

½ cup granulated sugar

2 eggs

2 tsp vanilla extract

1 cup all-purpose flour

1½ tsp baking powder

½ tsp salt

½ cup milk

12 oz whipped topping, thawed

1 cup confectioners’ sugar

red decorator gel, or any desired color

8 oz cream cheese, room temperature

2 tsp vanilla syrup

Gummy googly eyes

Halloween sprinkles

Colored sugar

Preparation

Preheat the oven to 350 degrees F.

In a large mixing bowl, cream the butter and sugar until they’re light and fluffy.

Add the eggs one at a time, beating well after each addition.

Stir in the vanilla extract.

Combine the flour, baking powder, and salt. Then, add it to the creamed mixture alternately with milk, beating after each addition.

Fill cupcake liners and bake in the oven for 25 minutes.

Transfer cupcakes to a wire rack, and let cool.

In a large mixing bowl, combine the whipped topping, confectioners’ sugar, and gel decorator, and mix well.

Top each cupcake with a large dollop of frosting.

Place a gummy eyeball on top.

Decorate with Halloween sprinkles and colored sugar if desired.
