Ingredients
1½cupsarborio rice
½cupfrozen petite peas
6ozfresh mozzarella
½cupparmesan,grated
3tbspbutter
3ozprosciutto,sliced
½tspsalt
3tbspfresh parsley,chopped
Preparation
Stir the rice into a medium pot of boiling, salted water and cook for about 15 minutes, until almost done. Stir in the peas.
Cook for about 2 minutes longer, until the peas and rice are just done. Drain.
Put the rice and peas back in the hot pot. Stir in the mozzarella, Parmesan, butter, prosciutto, salt, and parsley.
Serve immediately, and enjoy!
