Ingredients

1 garlic clove

kosher salt

¼ cup fresh cilantro, coarsely chopped

1 cup red onions, diced

2 tbsp olive oil, extra-virgin

2 ripe mangoes, peeled, pitted, and diced

4 scallions, thinly sliced

1 habanero chile, stemmed, seeded, and finely chopped

lime juice

tortilla chips

Preparation

Mince the garlic.

Sprinkle 1¼ teaspoon of salt and mash into a coarse paste.

In a small bowl, stir in the garlic paste with cilantro, red onions, oil, mango, scallions, habanero, and lime juice.

Set aside for 15 minutes.

Serve with tortilla chips for scooping. Enjoy!
