Ingredients

2tbspolive oil

2medium sweet potatoes,skin-on, diced into bite sized chunks

1white sweet potato,diced into bite sized chunks

1½tspsea salt

½tspblack pepper

¼red bell pepper,chopped

¼green bell pepper,chopped

4eggs,mixed

½cupcheese

Preparation

In a large skillet heat olive oil over medium high heat.

Add the potatoes along with the salt and pepper. Stir.

Cover the pan, lower the heat, and cook for 15 minutes. Stir every 4 to 5 minutes. Cook until potatoes are almost tender.

Remove the lid, turn to high heat and stir in the bell peppers and eggs. Cook for another 5 minutes or until the eggs are cooked and the potatoes are tender and browned.

Remove from heat, add cheese and serve.
