Ingredients
3cupssweet potatoes,cooked and mashed
⅓cupbrown sugar
⅓cupeggnog
2tbspmargarine,melted
1tspvanilla extract
½tspsalt
2egg whites
½cupbrown sugar
¼cupall-purpose flour
2tbspbutter
Preparation
Preheat the oven to 350 degrees F (175 degrees C).
Coat a 2-quart baking dish with non-stick cooking spray.
Combine the mashed sweet potatoes, brown sugar, eggnog, melted margarine, vanilla extract, salt and egg whites.
Spoon the mixture into the prepared baking dish.
Combine the sweet potatoes mix and flour.
Cut in the chilled butter until the mixture resembles coarse crumbs. Sprinkle over the sweet potato mixture.
Bake at 350 degrees F (175 degrees C) for 30 minutes.
Serve warm, and enjoy!
