The taco soup is similar to chili with its heartiness but you have all the favorites you’d expect in a taco – SO GOOD! This soup is so satisfying for the colder weather and such comfort food! Like our Beef Chili and Potato Soup and Olive Garden’s copycat Pasta Fagioli, it’s on the menu regularly.

We regularly serve Mexican-inspired dishes in our home, something kids and adults enjoy alike. From baked Chicken Fajitas to the Taco Bowls or even a classic Guacamole with chips, we love Mexican food. This soup is great to prepare for Taco Tuesday during the cooler weather. You still get the flavors you’d expect in a taco but it’s served in a hot bowl. You’ve got the ground beef with tomatoes, corn, peppers and beans in a rich broth.
how to make homemade taco soup-
SEASONING- Combine the ingredients for the taco seasoning. A store-bought taco seasoning may be used instead, season soup to taste. COOK MEAT- Saute the ground beef in a large pot with a thick bottom or a Dutch oven, stirring frequently and breaking the meat as it is being cooked. Lightly season the meat. PREP VEGETABLES- While the meat is sauteing, prepare the vegetables. Finely chop the onion, cube the tomatoes and peppers. TIP: If you’d like, the fresh tomatoes may be substituted for canned tomatoes. COOK SOUP- Once the meat is sautéed, add in the tomatoes, peppers, corn, drained beans, broth and seasonings. Turn soup to low and cook 12-15 minutes.

Hearty- This sour turn out really thick and hearty. If you prefer a soup with more liquid, add more than the indicated amount during cookingSubstitute meat- If you don’t like beef, you can substitute for ground pork or turkey with great results.Heat- Add in chopped jalapenos to taste with the remaining ingredients if you like your food on the spicier side.Tender vegetables- The onion, green and red pepper may be added as the meat is cooked if you want the vegetables to be really tender. NOTE: If you don’t have both green and red peppers, you can just use one whole green or red pepper.Beans- The beans may be added with the remaining ingredients if you want them on the softer side. Or, you can add them 5 minutes before the soup is done cooking if you just want to have them hold firm.Carrot- You can add in a finely cubed carrot with the vegetables if you enjoy carrots in soup.

When serving, we just add the toppings to individual bowls and place everything in the center of the table allowing everyone to add what they desire. Makes for such a fun dinner for the kids.
