Ingredients
2 lb suadero meat
2 tbsp beef rendered fat (or vegetable oil)
12 corn tortillas
2 cups water, plus more to cover the meat
½ white onion, finely diced
1 small bunch of cilantro, finely chopped
salt and pepper, to taste
hot salsa, of choice
Preparation
In a pot, add meat, beef fat or oil, and water. Boil for about 2 hours or until meat is tender. Add more water if needed.
Once meat is tender and water has reduced. Transfer the meat to a cutting board and shred. Return to pot and saute until lightly brown.
Warm the corn tortillas to form the tacos, top with the chopped onion and cilantro, and season with salt. Sometimes I cook the meat in advance and just brown on the griddle while warming the tortillas when ready to serve.
Warm the corn tortillas in a skillet or pan. Add chopped onions and cilantro. Top with the meat and season with salt and pepper. Add hot salsa if preferred. Serve and enjoy!
