Ingredients
2 lb pork tenderloin
3 tbsp vegetable oil
1 tsp dried thyme
1 tsp garlic powder
¼ cup white wine
4 cabbage wedges, chopped
1 cup red onion, diced
1½ cups potatoes, diced
1 cup chicken broth
salt & ground black pepper, to taste
Preparation
Season with salt, pepper.
In a large deep skillet, sear pork in vegetable oil until brown.
Add thyme and deglaze with white wine. Reduce briefly.
Set aside the pork.
Using the same pan, saute onions and potatoes briefly.
Add the chicken broth & garlic. Simmer until potatoes are tender, roughly 20 minutes.
Place the pork back & add the cabbage. Simmer for another 10 minutes.
Before serving, slice the pork into ½-inch then top with vegetables.
Serve and enjoy.
