Ingredients

2 lbs chicken breasts, boneless and skinless, pounded

1 tsp salt

½ tsp ground black pepper

3 garlic cloves, minced, or 1 tsp garlic powder

½ tsp chili powder, optional, or chili flakes

½ cup tequila

2 oz fresh lime juice, squeezed from 2 medium limes

1 tsp lime zest

lime wedges, optional for garnish

2 tbsp honey

2 tbsp orange juice, optional

2 tbsp olive oil

Preparation

Place the chicken in a ziploc or freezer bag.

Add the salt, pepper, garlic, chili powder or flakes, tequila, lime juice and zest, honey, orange juice, and olive oil.

Seal the bag and massage the chicken with all the ingredients. Chill in the fridge and let the chicken marinate for at least 30 minutes.

Preheat the oven to 400 degrees F.

Using tongs, transfer the chicken to a greased baking dish, keeping all the pieces in a single even layer. Save the marinade.

Bake chicken for 25 to 30 minutes or until the internal temperature reaches 165 degrees F when measured using an instant read thermometer.

Meanwhile, transfer the marinade into a sauce pan. Let it come to a simmer.

Lower the heat and reduce until it has thickened, about 8 minutes.

Transfer the chicken onto a serving plate. Drizzle the sauce and garnish with lime wedges on the side. Serve and enjoy your tequila lime chicken!
