Ingredients

½tspsalt

½tspground cumin

½tsppaprika

¼tspground red pepper

6oztilapia fillets,(4 fillets)

1tbspolive oil

3tbspbutter,softened

3tbspfresh cilantro,finely chopped

1tsplemon rind,grated

½tsppaprika

¼tspsalt

1lemon,quartered

Preparation

Simply combine the butter, cilantro, lemon rind, paprika, and salt together in a bowl. Use a spoon to stir and mash until blended.

Combine the salt, cumin, paprika, and ground red pepper in a bowl, then sprinkle them over both sides of the fish.

Lightly coat the fish with cooking spray.

Heat the olive oil in a large nonstick skillet over medium-high heat.

Add the fish, then cook 3 minutes on each side or until the fish flakes easily when tested with a fork.

Place the fish on a serving platter, then top with a dollop of cilantro-lemon butter.

Serve with a lemon wedge, to be squeezed on top of the fish, and enjoy!
