Ingredients
2 eggs, beaten
1 cup Parmesan cheese, grated
7 oz bread crumbs, seasoned
6 chicken breast halves, boneless and skinless
3 tbsp vegetable oil
12 oz pasta sauce
6 slices Monterey Jack cheese
Preparation
Preheat the oven to 375 degrees F.
Pour the beaten eggs into a shallow dish or bowl. Set aside.
In another shallow dish or bowl, mix together the grated parmesan cheese and bread crumbs.
Dip the chicken breasts into the beaten egg, then coat with the bread crumb mixture.
In a large skillet, heat oil over medium-high heat.
Add the coated chicken and saute for about 8 to 10 minutes on each side, or until the chicken is cooked through and the juices run clear. Set it aside.
Pour the tomato sauce into a lightly greased 9x13-inch baking dish.
Add the chicken, then place a slice of monterey Jack cheese over each breast.
Bake in the preheated oven for 20 minutes or until the cheese is completely melted.
Serve with your choice of pasta. Enjoy!
