Ingredients
36 ripe tomatoes, large, chopped
4 carrots, medium, shredded
2 sweet green peppers, large, or red peppers
4 celery stalks, diced, leaves included
2 white onions, diced
1 clove garlic, crushed
¼ cup lemon juice
2 tbsp honey, or agave syrup
½ tsp black peppercorns
2 bay leaves
⅓ cup fresh basil, dill, or thyme (optional)
1 slice tomato
Preparation
Combine all the ingredients in a large enamel or stainless steel pot, and simmer over low heat for 45 to 50 minutes, stirring occasionally, until the vegetables are soft.
Strain the vegetables from the juice and serve.
