Ingredients

4 bacon , sliced and diced

½ cup onion, chopped

12 fresh tomatoes

1 small tomato paste

3 lemon rind strips

1 large carrot, sliced

2 large chicken broth

2 tsp white pepper

salt and pepper

½ tsp thyme

2 tsp basil

4 tbsp parsley

parsley , garnish, chopped

basil, garnish, chopped

fried garlic croutons, garnish

Preparation

Heat bacon in pan.

When fat has run, add butter; melt. Add onions; cook gently 5 to 6 minutes, until tender and golden brown.

Add tomatoes, tomato puree, lemon rind, stock, carrot, white pepper, salt, pepper, sugar and herbs; bring to a boil.

Simmer for 20 minutes or until tomatoes are tender.

Put through a processor or blend in a blender.

Adjust seasoning.

Serve hot; sprinkle with parsley and basil and croutons.
