Ingredients
2lbvine ripened tomatoes,(about 6)
¾lbfresh mozzarella,salted
1¼cupfresh basil,chopped
½cupblack olives,halved and pitted
4tspbalsamic vinegar
1¼tspsalt
½tspfresh ground black pepper
1lbspaghetti
½cupolive oil
3garlic cloves
Preparation
In a large glass or stainless-steel bowl, combine the chopped tomatoes with the mozzarella, basil, olives, balsamic vinegar, salt, and pepper.
In a large pot of boiling, salted water, cook the spaghetti for about 12 minutes until just done. Drain, add to the tomato mixture, and toss.
Heat the oil in a small frying pan over moderately low heat. Add the garlic and cook, stirring, for 1 minute.
Pour the oil over the pasta and toss again.
Serve warm and enjoy!
