Ingredients

1½cupsscallions,thinly sliced

6tbspfresh ginger,minced

¼cupvegetable oil

1tspsherry vinegar

1½tspsoy sauce,light or low sodium

kosher salt

¾lbturkey breast

turkey cracklings

Preparation

In a medium bowl, combine the sliced scallions with the minced ginger, vegetable oil, sherry vinegar, and soy sauce. Season with kosher salt.

Cut the turkey breast into 6 thick slices. Arrange the turkey slices on individual plates and spoon the ginger-scallion sauce on top.

Garnish with Turkey Cracklings if desired and serve at once.
