Ingredients

20ozkidney beans,(1 can), undrained

30ozchili beans,(1 can), undrained

28ozblack beans,(1 can), undrained

31ozblack-eyed peas,(1 can), undrained

28ozdiced tomatoes,(1 can), undrained

2lbslean ground beef

1lbhot Italian sausage

2largegreen bell peppers,chopped

1largered bell pepper,chopped

6smallyellow onions,chopped

1red onion,chopped

6garlic cloves,minced

4ozsliced jalapeno peppers,(1 can), finely chopped

7ozchipotle chiles in adobo sauce,(1 can), finely chopped

6serrano peppers,finely chopped

4orange habanero chili peppers,finely chopped

1banana pepper,seeded and finely chopped

3cherry peppers,finely chopped

1Anaheim pepper,finely chopped

4red Thai chili peppers,finely chopped

4green Thai chili peppers,finely chopped

2tbspchili powder,or to taste

1½tbspcumin,ground

3tbspred pepper flakes

⅓envelopetaco seasoning mix

cayenne pepper,or amount to taste

salt and ground black pepper,to taste

Preparation

Place the kidney beans, chili beans, black beans, and black-eyed peas in a large, heavy pot., and simmer over medium heat.

Place the ground beef and sausage in a skillet over medium-high heat. Cook for about 10 minutes or until crumbly and evenly browned. Drain, and stir into the bean mixture.

Place the red and green bell peppers, yellow and red onions, and garlic on top of the bean and meat mixture. Cover and steam for at least 10 minutes.

Stir in the jalapeno, chipotle, serrano, habanero, banana, cherry and Anaheim peppers, red and green Thai chilies, chili powder, cumin, red pepper flakes, and taco seasoning.

Season to taste with cayenne pepper, salt, and black pepper. Cover, and simmer over medium heat, stirring occasionally, for 3 hours.
