Ingredients
1½cupsplain 2% Greek yogurt
1cupmedium english cucumber,(about 1 medium) or hothouse cucumber, seeded, coarsely grated and squeezed as dry as possible
2clovessmall garlic,minced
2tbspextra virgin olive oil
¾tspscant salt
¼tspfreshly ground black pepper,scant
2tbspfresh mint,finely chopped
Preparation
Combine all ingredients in a medium bowl and mix until well combined. Taste and adjust seasoning if necessary. Cover and chill until ready to serve.
Before serving, drizzle with a bit of olive oil and sprinkle with fresh mint, if desired.
