Ingredients

5tbspvegetable oil

1lbfresh plain chicken sausages

4clovegarlic

2tbspginger,minced

4ozsnow peas

2fresh hot long red chilis

cupfresh orange juice

½lbchinese egg noodles,fresh or dried

1cupchicken stock

3tbsphoisin sauce

2tspcornstarch

salt

½cupbasil leaves,slivered

Preparation

In a wok, heat 2 tablespoons oil. Add chicken sausage and stir-fry over high heat, breaking it up, until just cooked through.

Transfer to a plate. Heat remaining 3 tablespoons oil in wok.

Add garlic and ginger and stir-fry over moderately high heat until golden.

Off heat, stir in snow peas and chilis for 1 minute.

Add orange juice and stir over moderately high heat for 30 seconds.

Add sausage, noodles, and stock mixture, season with salt, and stir-fry until sauce is thickened.

Remove from heat, stir in basil, and serve.
