Ingredients

7 oz angel hair pasta, or spaghetti, cooked and cooled

6½ oz tuna chunks in water, (1 can), or tuna flakes in water, drained, flaked if using chunks

⅓ cup pasta water, add more as needed

5 cloves garlic, thinly sliced

4 tbsp oyster sauce

4 tbsp olive oil

2 tbsp chili flakes

1 tbsp soy sauce

salt and ground black pepper, to taste

¼ tsp green onions, or parsley, thinly sliced

¼ tsp parmesan cheese, grated or powdered

1 egg, per serving, boiled or sunny-side-up

Preparation

Heat up oil in a skillet over medium heat. Add garlic and tuna. Saute briefly.

Add chili flakes, soy sauce, and oyster sauce. Continue sauteing.

Increase to medium-high heat, add cooked pasta and pasta water.

Continue sauteing until the liquid thickens to a sauce while tossing the pasta to coat.

Adjust seasoning as necessary with salt and pepper.

Serve onto plates, then place eggs done your way. Garnish with parmesan cheese and parsley or green onions.
