Ingredients
7cupsbaby potatoes,skin on, chopped in half
¼cupparsley leaves,fresh, chopped
2greenonions,thinly sliced
1½cupscelery,chopped
4eggs,hard boiled, chopped, optional
1tsplemon-pepper seasoning
1tbspdijon mustard
6tbspmayonnaise
1cupsour cream
1cupcheddar cheese,shredded
8slicesbacon,cooked crisp, chopped
Preparation
In a large bowl, mix all ingredients except the potatoes. Set aside.
Boil the potatoes for about 10 to 15 minutes until tender. Drain the potatoes and let sit until just warm.
Combine warm potatoes with sour cream mixture and serve.
