Ingredients

1½cupsdry orzo

salt

1tbspfresh lemon zest

2tbspfresh lemon juice

1½tbspextra virgin olive oil

2tsphoney

5cupsseedless watermelon,cubed, diced into ½ to ¾ inch cubes

6ozfeta cheese,crumbled

¼cupfresh basil,chopped

Preparation

Cook pasta in salted water according to directions listed on the package. Drain well but don’t rinse, then pour into a large bowl.

While pasta boils, stir together lemon zest, lemon juice, olive oil, and honey. Pour half of the mixture over drained pasta in the bowl and toss.

Season with salt taste. Allow to cool.

Add watermelon, feta, and basil to the orzo. Add remaining lemon juice mixture and toss to evenly coat.
