Ingredients

1small onion,diced

2garlic cloves,minced

1cupcarrots,diced

4cupscabbage,chopped, approximately ¼ head of cabbage

1cupgreen beans,1-inch pieces

2bell peppers,chopped

28ozdiced tomatoes,1 can, low sodium

6cupsbeef broth,low sodium

2tbsptomato paste

2bay leaves

½tspthyme

½tspbasil

pepper,to taste

2cupsbroccoli florets

2cupszucchini,sliced

Preparation

In a large pot cook onion and garlic over medium heat until slightly softened.

Add carrots, cabbage, and green beans and cook for an additional 5 minutes.

Stir in bell peppers, undrained tomatoes, broth, tomato paste, bay leaves, and seasonings. Simmer for 6 to 7 minutes.

Add in zucchini and broccoli. Simmer for an additional 5 minutes or until softened.

Remove bay leaves before serving.
